Kaiseki, the traditional multi-course menu which focuses on the most seasonal of ingredients, reaches its Manhattan pinnacle with this remarkable eatery at a slightly covert but luxurious location in Chinatown. Chef Isao Yamada, a protege of the legendary New York chef David Bouley, dazzles a handful of diners nightly with a seafood-centric menu which draws upon Atlantic and Pacific waters for sourcings of such delicacies as Hokkaido sea urchin or Maine lobster. Yamada’s signature Alaskan king crab and foie gras chawanmushi, a savory steamed custard, is exquisitely velvety, but the tour-de-force Dover sole and Dungeness crab donabe, cooked in a clay pot, is a spectacular visual presentation and absolutely steals the show.
