Santiago Flavors Galician cooking is delicious, robust and tasty, and relies on the excellent quality of local ingredients. Seafood and shellfish are extensively farmed in the rias, deeply indented coastal inlets, and are of superb quality. Regional specialties include pulpo (octopus) cooked in various ways; blood puddings and sausages; and empanadas, a flat pie with a meat or fish filling. This is one of the few Spanish regions where lamb is eaten, and local beef also is particularly good. Santiago has many pastry shops, where you'll find wonderful cakes and cookies. Local wine varieties include Ribeiro and Albaríno, straightforward whites, and the excellent red Amandi and Condado. If the weather's cold try a cup of hot chocolate; thick enough to eat, it's some of the best in Spain. |
